Who doesn’t love a good meatball? I was recently at one my favorite lunch spots and noticed turkey sweet potato meatballs on their menu. After ordering them I fell instantly in love and knew I had to re-create them as soon as possible. Lean ground turkey + sweet potato + caramelized onions = meatball magic! As if they they weren’t amazing enough, I brush them with a caramelized onion and roasted garlic jam 10 minutes before they come out of the oven. The result makes for a sticky sweet caramelized meatball!

These can be enjoyed as a main course or make a wonderful party hors d'oeuvres. They also reheat wonderfully throughout the week for easy meal prep! Try them immediately…trust me!

ingredients:

1 lb ground turkey

1/2 medium sweet potato

1 tbs olive oil

2 cloves garlic

1/2 cup panko

1/2 cup caramelized onions (I suggest using this recipe)

1 egg

1 tbs grated parmesan cheese

2 tsp worcestershire sauce

1 tbs coconut aminos

1/2 cup onion jam (I love this one)

directions:

Makes 20 meatballs

Preheat oven to 375°

Peel and dice sweet potato into small pieces.

To a sauté pan over medium heat, add olive oil and sweet potato. Add salt & pepper. Sauté sweet potato until softened (approximately 10 minutes). Add garlic and sauté for an additional 1-2 minutes. Remove mixture from heat.

To a large mixing bowl, add ground turkey, sweet potato, panko, caramelized onions, egg, parmesan cheese, worcestershire sauce and coconut aminos. Mix until combined (I suggest using your hands for this).

Using a cookie dough scoop or your hands, gently form meat mixture into balls (don’t roll or overwork the mixture with your hands). Place meatballs on a greased or foil lined baking sheet.

Bake meatballs for 20 minutes. Remove from the oven and generously brush each meatball with the onion jam. Place back in the oven and continue to bake for an additional 10 minutes, or until the meatballs have cooked through.
